Green Chilli Mint Tofu Noodles

Ingredients:

  • 200g tofu, cubed
  • 2 green chillies, finely chopped
  • A handful of mint leaves, chopped
  • 200g noodles, cooked
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a pan and sauté green chillies.
  2. Add tofu, soy sauce, salt, and pepper. Cook until tofu is crispy.
  3. Add bell pepper and carrot, stir-fry for 2 minutes.
  4. Add cooked noodles and mint leaves, toss well.
  5. Serve hot.
