Green Chilli Mint Tofu Noodles
Ingredients:
- 200g tofu, cubed
- 2 green chillies, finely chopped
- A handful of mint leaves, chopped
- 200g noodles, cooked
- 1 bell pepper, sliced
- 1 carrot, julienned
- 2 tbsp soy sauce
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Heat olive oil in a pan and sauté green chillies.
- Add tofu, soy sauce, salt, and pepper. Cook until tofu is crispy.
- Add bell pepper and carrot, stir-fry for 2 minutes.
- Add cooked noodles and mint leaves, toss well.
- Serve hot.
