Green Chilli Mint Tofu Soup

Grren mint tofu soup

Ingredients:

  • 200g tofu, cubed
  • 2 green chillies, finely chopped
  • A handful of mint leaves, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a pot.
  2. Sauté garlic, green chillies, and onion until soft.
  3. Add vegetable broth and bring to a boil.
  4. Add tofu, salt, and pepper. Simmer for 10 minutes.
  5. Stir in mint leaves before serving.
