Green Chilli Mint Tofu Soup

Grren mint tofu soup
Ingredients:
- 200g tofu, cubed
- 2 green chillies, finely chopped
- A handful of mint leaves, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Heat olive oil in a pot.
- Sauté garlic, green chillies, and onion until soft.
- Add vegetable broth and bring to a boil.
- Add tofu, salt, and pepper. Simmer for 10 minutes.
- Stir in mint leaves before serving.
