Green Chilli Mint Tofu Tacos

Green chilli mint tofu taccos

Ingredients:

  • 200g tofu, cubed
  • 2 green chillies, finely chopped
  • A handful of mint leaves, chopped
  • 1 red onion, sliced
  • 1 bell pepper, sliced
  • 8 small corn tortillas
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a pan.
  2. Sauté green chillies and red onion until soft.
  3. Add bell pepper, tofu, soy sauce, salt, and pepper. Cook until tofu is crispy.
  4. Warm tortillas in a separate pan.
  5. Fill tortillas with tofu mixture and garnish with mint leaves.
