Peri peri buddha bowl
Ingredients:
- 1 block of tofu, pressed and cubed
- 3 tbsp peri peri sauce
- 1 tbsp olive oil
- 2 cups cooked brown rice
- 1 cup steamed broccoli
- 1 cup shredded carrots
- 1 cup edamame
- ¼ cup sesame seeds
- Soy sauce for drizzling
Instructions:
- Marinate tofu in peri peri sauce and olive oil for at least 30 minutes.
- Heat a pan over medium heat and cook tofu until browned, about 7-10 minutes.
- In a bowl, arrange cooked brown rice, steamed broccoli, shredded carrots, and edamame.
- Add cooked tofu on top and sprinkle with sesame seeds.
- Drizzle with soy sauce before serving.
